Who Sunny is
Sunny is the girlfriend of the protagonist, Aidan Lynch. She is the one who obtained the puzzle box, and the one who introduces it in the opening scene, which is the detail the ending recontextualises.

What happens to her in the opening
Sunny brings out the box during an intimate scene with Aidan and is injured by it, which activates it and summons the Cenobites. The Hell Priest responds by summoning hooked chains that tear her apart; Aidan is knocked unconscious.
It reads as the inciting tragedy. It is actually the first move in her plan, and the injury that starts the box is not the accident it appears to be.
How she comes back
Sunny returns as a living skeleton. She can only be fully restored by feeding on the chosen, so Aidan spends the middle of the campaign collecting flesh for her.

Feeding her Marlowe's heart fully restores her human form. The game also reveals, late, that she only ever needed flesh from the chosen rather than their deaths, which puts Aidan's kills in a different light.
Her real allegiance
The reveal is that Sunny agreed from the outset to become the Revenant Mother: she would carry and give birth to the Hell Priest in exchange for becoming a Cenobite herself. She manipulated Aidan into resurrecting her to get there.
She is not a passive victim of the box. She is the reason the box was in the room, and she describes the arrangement as mutual use rather than betrayal.
Design note: the Genesis Configuration exists to identify a Revenant Mother — someone with a womb, sufficient will, and an emptiness that cannot be filled. Sunny is the candidate it was looking for, which is covered on the Genesis Configuration page.
What she becomes
At the end of the story Sunny becomes a Cenobite while keeping her human form, and the Hell Priest refers to her as the revenant mother. She accepts his invitation to join his group, and the Cenobites — all but the Fallen — open Leviathan's body and enter the Void within.
Her ending is a reward in her own terms rather than a punishment. Community reaction has been divided on that point, and the ending page lays out both conclusions and the choice that precedes them.
The Free Sunny's Soul objective
Freeing Sunny is a main-story objective rather than an optional quest. Aidan follows Pinhead through the Labyrinth and works through traps and interactions before reaching her pillar in the Field of Souls, where he is told she is held.
